Ingredients to Prepare:
- 1 tablespoon of butter, for greasing pan
- 1 tablespoon of cocoa powder, for coating the greased pan
- 10 tablespoons butter, in medium sized microwave-safe bowl
- 1 1/3 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 5 tablespoons unsweetened cocoa powder
- 3/4 cup all-purpose flour
- 1/4 teaspoon kosher salt
- powdered sugar, for dusting on top, optional
- strawberries or raspberries, optional
Kitchen Tools Needed:
- 8 inch round cake pan
- parchment paper
- fine mesh sieve
- mixing bowl
- cooling rack
- oven mitts
Step 1: Preheat oven to 350 degrees
Step2: Using your 8 inch cake pan, you will trace the bottom onto a sheet of parchment paper. Then cut out this 8 inch round. I placed a jar of tomato sauce in the pan while my son traced it, so that the pan didn’t move around. Set the parchment round aside.
Step2: Grease 8 inch cake pan with 1 tablespoon of butter. Then dust with the tablespoon of cocoa powder to coat. You will just lightly tap and tilt your pan until the whole pan is dusted with the cocoa powder. Do this over the sink!
Step 3: Place 8 inch parchment round in the bottom of your prepared pan.
Step 4: Melt the butter in the microwave.
Step 5: Pour sugar into the butter and whisk well.
Step 6: Add eggs, one at a time, whisking well after each addition.
Step 7: Add vanilla and whisk well.
Step 8: In a small bowl, using your fine mesh sieve and fork, sift together the cocoa, flour, and salt. Pour each ingredient into your sieve that is placed over a bowl. Use the fork to stir until all the ingredients have been sifted through.
Step 9: Add your dry ingredients into the wet ingredients and mix with a spatula until just incorporated. Do not over mix.
Step 10: Pour the thick batter into the prepared cake pan and spread evenly with the spatula.
Step 11: Bake for 20-22 minutes. The cake will be slightly firm on the outside but moist and sticky on the inside. Let this cake cool in the pan for 10 minutes on a wire rack.
Step 12: Place a flat dish or cutting board over the cake pan and gently flip it over to remove the cake from the pan. If properly greased and dusted, the cake should come out easily. Then, place whatever cake stand or serving dish you want to use on top of the cake and flip it over again so it’s right side up.
Get creative and serve it however you desire. Maybe with a scoop of vanilla ice cream and berries. Possibly whip cream and chocolate shavings. Simply dust it with powdered sugar and top with berries. Whatever sounds delicious to you. And enjoy!
