Dutch Baby Pancake

Recipe adapted from Florence Fabricant of NYT Cooking.

Who loves brunch? My family LOVES brunch. We kick off our weekend with a slow morning, making lots of delicious food, and enjoying that food together. This Dutch Baby Pancake recipe has quickly become our favorite. It requires few ingredients and little equipment. Plus, it is so easy and fast to make and I’m not standing at the stove for ages flipping pancakes one by one anymore. This recipe is on repeat in our house.

Traditionally, this pancake is sprinkled with powdered sugar and a squeeze of lemon. Sweet and tangy and absolutely delightful! I suggest you try this out, but then ultimately decide what you like most on your pancake.

We make this pancake the centerpiece of our brunch and provide lots of toppings. Have fun with this part! Some topping suggestions:

  • powedered sugar
  • maple syrup
  • peanut or almond butter
  • jam or preserves
  • fruit
  • lemon wedges
  • bacon
  • chocolate
  • sprinkles
  • marshmallows
  • whip cream

The name Dutch Baby Pancake was coined in the early 1900’s from Manca’s Cafe in Seattle, Washington. The owner offered a variation of a German Pancake, or Deutsch Pancake. One of his daughters was unable to pronounce deutsch and instead said “dutch”. Hence, the name “Dutch Baby Pancake”.

Since it is also known as a German Pancake, we explore Germany for today’s lesson. Germany is a country in the continent of Europe. It is well known for it’s Autobahn, or highway system. Much of it is unregulated for speed, allowing people to drive as fast as they feel comfortable.

Speaking of driving fast, we introduce Michael Schumacher, a German race car driver. He is the only driver in history to win the Formula One World Championship 7 times!

I’ve challenged my young viewers to write a biography, a detailed description of someone’s life written by someone else. Using this timeline I provide, write a paragraph or more about Michael Schumacher.

One could also choose to write a timeline for their parent’s life or brother’s or sister’s. Using that timeline, write a biography for that person.

Now, just like the Autobahn and Michael Schumacher, this recipe is fast! Prepare your ingredients, blend, bake, and devour!

If you have a large family or want larger portions because it’s that good, you can double the batter for this recipe and bake it in a 9″x13″ baking pan, with 5 TBSP of butter melted in the pan. Bake for 22-27 minutes or until golden brown and puffy.

Ingredients to Prepare:

  • 1/2 cup all-purpose flour
  • 1/2 milk, room temperature
  • 3 eggs, room temperature
  • 1 Tablespoon sugar
  • Pinch of nutmeg
  • 4 Tablespoons unsalted butter
  • Toppings: powdered sugar and lemon wedges, or whatever you desire!

Equipment Needed:

  • blender
  • 10″ cast iron skillet or baking pan

STEP 1: Pre-heat oven to 425 degrees Fahrenheit.

STEP 2: Add flour, milk, eggs, sugar, and nutmeg to the blender and blend until smooth. It is a very thin batter. You may also mix by hand.

STEP 3: Place butter in skillet or baking pan and place in the oven until the butter has just melted. Be careful not to burn the butter! Remove from the oven.

STEP 4: Pour the batter into the buttered skillet or pan and bake for 20 minutes, until the pancake is puffed and golden.

STEP 5: Reduce the oven temperature to 300 degrees Fahrenheit and bake for an additional five minutes.

STEP 6: Remove the pancake from the oven, cut into wedges and serve it with your choice of toppings!
